Splash into summer with refreshing recipes from Lilly Pulitzer
Good morning Lilly Lovers! At The Pink Pelican, we hope you are all getting ready for a long weekend of fun, sun and remembrance. Raise a glass and enjoy refreshing recipes from Lilly Pulitzer for sweet treats that Lilly Lovers of ALL ages can enjoy. Today on the blog, we share Lilly's recipes for Mango-coconut colada with ginger and Watermelon-strawberry lemonade--yum! These recipes are from the book Essentially Lilly: a Guid to Colorful Entertaining.
Mango-coconut colada with ginger
3 mangoes, peeled, coarsely chopped (about 3 3/4 cups)
1 1/2 cups canned cream of coconut
3/4 cup mango or apricot nectar
3 tablespoons finely chopped candied giner
3 tablespoons fresh lemon juice
4 to 5 cups ice
In blender, blend mangoes, cream or coconut, mango or apricot nectar, ginger and lemon juice until pureed. Add ice cubes and blend until smooth. Pour into wineglass and serve!
4 cups 1-inch pieces seedless watermelon (about 1/4 of small watermelon)
1 generous cup strawberries, hulled (about 10 medium strawberries)
2 cups water
1/2 12-ounce can lemonade frozen from concentrate
Combine watermelon, strawberries and 1 cup water in blender and puree. Pour mixture into large pitcher.
Add remaining 1 cup water and lemonade concentrate to pitcher. Stir to combine well. Serve over ice.
